Breaded Eggplant over Angel Hair Pasta with Broccoli Rabe and Tomato

large eggplant
1 cup flour
3/4 cup water
1/4 tsp salt
1/4 tsp pepper
2 cup panko bread crumbs
avocado oil spray
1 bunch broccoli rabe
1 cup chopped tomatoes
3 cloves garlic
half a lemon
1 Tbsp vegan butter
Salt, pepper, oregano to taste
Preheat oven to 400°
Mix flour, salt & pepper with water to form a batter
Dip eggplant in batter and coat with panko
Spray sheet pan with oil and place eggplant in a single layer
Spray top of eggplant with oil and bake 20 minutes until golden brown
To prepare veggies:
Blanch broccoli rabe for 3 minutes
Saute garlic in butter and add broccoli rabe and tomato
Season with salt, pepper, and oregano and squeeze lemon
Cook angel hair pasta.
Plate and Serve with Love!
