Vegan Vanilla Cupcakes with Strawberry Frosting

1 1/4 cup all-purpose flour

3/4 cup brown sugar

1/4 cup cane sugar

1/4 tsp salt

1 tsp baking soda

1/2 Tbsp apple cider vinegar

1/2 cup melted vegan butter

1 cup soy milk

1 Tbsp pure vanilla extract 

 

Preheat oven to 350°

Mix flour, sugars, baking soda and salt

Add soy milk, butter, vanilla and apple cider vinegar 

Mix until blended, use fork to break up big lumps and do not overmix

Pour into cupcake tins with or without wrappers

Bake for 25 min and cool completely before frosting

 

Frosting

1/2 cup vegan butter

2 cup powdered sugar

1 Tbsp pure vanilla extract

1/2 cup blended strawberries

 

Add all ingredients together and mix slow at first, working up to high speed

Put into piping bag, frost and
